Spinach & Strawberry Salad w/Poppy Seed Vinaigrette

Spinach can seem heavy for a salad, but this combination of flavors is awesome in spring and summer, and tastes fresh and light. Again, even if you don’t think you like spinach – just give it a try and see!


Ingredients

  • 5-6 cups fresh baby spinach

  • 1-2 cups sliced strawberries

  • 2-3 tbsp feta or goat cheese

  • 2 tbsp honey roasted or toasted pecan pieces

Dressing:

  • ¼ cup vegetable oil (or any light salad oil – olive works well)

  • 3 tbsp vinegar (I’ve used balsamic as well)

  • 3 tbsp sugar

  • 2 tsp poppy seeds

  • Pinch of salt & pepper


Directions

Add ingredients to a salad dressing shaker, or small container with tight-fitting lid, and shake well to integrate. Arrange spinach on large plate, and top with strawberries, cheese, and pecans. Just before serving, drizzle dressing over top.
